Very uneventful day

I got up after Andy had finished showering, did some web searching for various stuff, went to my weekly appointment and did time at KC. I managed to medicate Domino without decorating myself or much of the furniture. Dinner was a pork loin roast with potatoes done along. Next time I need to remember to have the roast when I can monitor it as it cooks. The roast is fine, but many of the potatoes are blackened, and it had nothing to do exotic cooking. Those which survived had a great flavor though, and we have enough roast for tomorrow (I can make mashed or some other sort of potatoes to go along), so overall it's not too bad.

I have discovered what I am going to be drooling over for a big trip we take in the future, like on an important anniversary or something:

One heck of a light show.

Potatoes going in with a long roast usually turn out better if they're submerged in broth or something (though then they may just fall apart, but I've done slow-cooker roasts and they've been fine), or try wrapping them in tin foil, maybe? Another great trick is taking a packet of dry mix like onion soup or ranch dip, mixing with enough olive oil to form a thick dressing or wet paste, and toss the potatoes in it. Bake at 350 until tender (um, 45 minutes?). Also good with other veggies like onion quarters and carrots.

And on the light show: My sweetie is from Alaska. Talkeetna is cold. Really, really cold. Like, 40 below every winter. Fortunately the guy looks like he knows what he's talking about, so if you follow his advice on dressing warmly and on the camera equipment, you'd probably be fine. ;)

(smile) A friend of mine was raving over the auroras on her Alaskan cruise. Also got to see lots of pretty fjord-like things and polar bears and killer whales. Would love to go on one of those someday, and share the experience with someone special. :-)
