The Copeland plan looks quite nice. At first glance it seems a bit narrow, but I think I like it better than the Handel. Which elevation are you considering? The one with sloping roofs or the more traditional New Mexican style?
As far as Centex versus other places, Janell and I got that same impression with some other places we looked. Centex includes a lot in the base plan. They, and everyone else, will nickel and dime you if you want anything extra (I think the local Centex rep said the average add on to a house in our neighborhood was in the range of $20k; and just for reference, ours wasn't that much, more like $10k, iirc) but having the starting point be that much higher can make a big difference.
