Do you use procmail and spamassassin? if so I have some procmail recipes that you might be interested in - it keeps a second copy of each message in learned-spam, learned-good, and unlearned folders so you can sort and relearn later.
Probably if you're using some other bayes thing than spamassassin this won't help...
